Kale Chips

Kale Chips

I’m such a snacker, you guys! It’s probably because I’m literally chasing several humans around ALL. THE. TIME. And, if I’m going to be a snacker and remain healthy, I need to have healthy snacks on hand. That’s what I love about these Kale Chips – they are easy to make, delicious and I don’t feel a single ounce of guilt eating them!

Kale chips are SO easy to make. And…SO good! They’re crispy, salty and they satisfy the need to have something “snacky.” My kids even ask for these…so you know they’re yummy!

I like to use garlic salt when I make these kale chips, but you can use regular kosher or sea salt, too. Also, feel free to play around with these. If you want to add a teaspoon of herb seasoning mix instead of just garlic salt, go ahead. The sky really is the limit here!

You’ll be amazed at how satisfying and addicting these kale chips become. Who knows…you may even find yourself putting kale on your shopping list each week! After you’ve tried this recipe, hop back over to the blog and try out my recipe for Creamy Chocolate ‘Milk’ Shake…it’s so good that you’ll never even know that it’s ultra healthy & soooo good for you!

Until next time…Eat Well. Travel Often. Love Much.

xoxo

Garlicky, salty and crunchy...what could be better in a Whole 30 snack?! Nothing, absolutely nothing. Go make this snack right now to satisfy your desires!

Ingredients
  • 1 Bunch of Kale, stemmed and chopped medium size
  • 2 tsp. extra virgin olive oil
  • garlic salt OR kosher salt + freshly ground black pepper
Directions
  • Step 1 Preheat oven to 300 F.
  • Step 2 Stem and coarsely chop the kale. Since the kale will shrink in the oven, don’t chop it up super tiny like you would for soup, but larger chunks. Make sure the kale is completely dry by using a paper towel to remove any moisture that may be on it. Place the kale in a large bowl.
  • Step 3 Slowly drizzle just 2 tsp. of extra virgin olive oil on the kale and using a rubber spatula (or your hands) mix the olive oil around onto the kale. It may appear like there isn’t enough oil, but there is. You don’t want too much otherwise you won’t get the “crispy kale chips” that you’re looking for here.
  • Step 4 Slowly sprinkle the salt of your choice over the kale mixture and stir to spread it evenly. I love using garlic salt here because….garlic!
  • Step 5 Spread the kale onto a rimmed baking sheet and bake in the preheated oven for 10 minutes, then turn the baking sheet 1/2 way. Continue to bake for about 5-6 more minutes.
  • Step 6 Pull the baking sheet from the oven and let it sit without touching it for 5 minutes. Not touching it while it cools keeps it crispy.
  • Step 7 Eat & enjoy! You’ll be amazed at how yummy this snack really is!
