I don’t know about you, but I am a “snacker.” I like to keep my energy up throughout the day by fueling it with good foods: proteins, good fats and some carbohydrates. If I don’t have healthy snacks on hand, then I get hangry (hungry + angry)…and trust me, no one wants me getting hangry! (HA!)  Today’s recipe comes to you from my deep love of snacking—>Almond Joy Energy Balls.

There are countless ways to make energy balls (or bites). If you search Pinterest, you’re likely to come up with thousands of recipes. The recipes and variations are as unique as your own desired tastes!

I really like chocolate and coconut. These flavors are satisfying to me when I’m in need of a snack or a treat. If I’m going to snack on something it has to taste delicious and fuel a void in my body (hunger).

Today’s recipe for Almond Joy Energy Balls includes rich dark chocolate, chocolate cocoa powder, satisfying almond butter and delicious toasted coconut flakes.

These ingredients will keep you fueled throughout your morning meetings, workouts, the mid-afternoon slump & running around for your kid’s activities. These are perfect to put in your kid’s lunch box as well (provided you can bring nuts into the school–we still can & feel so fortunate for that!).

Almond Joy Energy Balls

These little energy bites pack a delicious punch of chocolate, almond & coconut into one perfect-sized snack that's not only super yummy, but highly nutritious!

Ingredients
  • 15 small pitted Medjool dates (or 10-12 medium to large ones)
  • 1 cup almond butter
  • 1/2 cup raw honey
  • 3 T. cocoa powder
  • 2 T. coconut flour
  • 1/2 cup flaxseeds, finely ground
  • 1 tsp. pure vanilla extract
  • 1/2 cup chopped dark chocolate
  • kosher or sea salt
  • unsweetened toasted coconut, for rolling
Directions
  • Step 1 In a food processor or high speed blender, process the almond butter, honey, dates, cocoa powder, coconut flour, salt and vanilla until it combines into a smooth mixture.
  • Step 2 Stir in the chopped chocolate.
  • Step 3 Chill the mixture in the fridge for about 30 minutes until firm enough to handle.
  • Step 4 Place the toasted, shredded coconut on a plate (if you’re using) and roll the chilled mixture into 1 inch balls, OR use a small cookie scoop. Roll each ball in the coconut.
  • Step 5 Store in a container in the fridge for up to a week or in the freezer for 3-6 months. (they won’t last that long, though!
  • Step 6 Enjoy!
