Sweet Potato, Sausage & Greens Egg Frittata

I absolutely LOVE egg dishes! They are so rich and filling and SUPER healthy (as long as they’re not loaded with cheese and buttery crusts…but those are great, too!). Since I always have an abundance of eggs on hand–ah hem, I am the chicken lady–I created a super satisfying brunch frittata loaded with vegetables, eggs and sausage that your whole family will love…enter in this Sweet Potato, Sausage + Greens Egg Frittata.

In this recipe, I place very thinly sliced sweet potatoes on the bottom. It gives the egg dish some structure because without a crust on the bottom, let’s face it, we are just eating scrambled eggs with veggies.

Next, I load the frittata with LOTS of delicious sausage, sauted bell pepper and greens. If you have someone who doesn’t care for bell peppers, omit them or replace them with thinly sliced, sauted mushrooms. I always add greens because we can all use a dose of daily greens in our lives!

Eggs. Let’s talk eggs here for a minute. While there are no rules about eggs in the Whole 30 or Paleo protocol, I do try to source organic and free range eggs. Why? Well…now that I’m a chicken owner, I realize how humanely we treat our birds in contrast to the mass produced “egg farms” out there. A hen’s diet and lifestyle directly affects the quality of her eggs and I understand that now. We spoil our hens to pieces! It’s borderline ridiculous how well they eat and how much they get to roam around. But…happy hens = happy eggs! The words of advice I’ve always stuck to “Buy the very best ingredients you can afford.” The same holds true here.

Sweet Potato, Sausage + Greens Frittata

Thinly sliced sweet potato disks provide a delicious grain-free alternative to a traditional quiche, while the rich, savory fillings of sausage, greens and bell peppers kick the flavor notes up a few notches! I promise you'll be making this long after your Whole 30 month is over!

Ingredients
  • 1 medium sweet potato, peeled
  • 1/2 pound breakfast sausage-either turkey or pork, casings removed and crumbled up
  • 1/2 tsp dried rosemary or 1 tsp fresh rosemary-chopped
  • 1 cup sauted spinach or kale
  • 1/2 finely diced bell pepper (optional)
  • 10 eggs
  • 3 T. cashew milk or coconut milk (I like the neutral flavor of cashew but use whatever alternative milk you have)
  • kosher salt + freshly ground black pepper
Directions
  • Step 1 Preheat the oven to 350F.
  • Step 2 Lightly grease the baking dish (I use a quiche pan but a pie plate will also work beautifully here) with Extra Virgin Olive oil.
  • Step 3 In a small skillet, heat a little EVOO and saute the greens until wilted and set aside.
  • Step 4 Saute the bell pepper until soft (if using) and set aside.
  • Step 5 Peel the sweet potato and then, very thinly slice the sweet potato into disks, about 1/16 inch-1/8 inch in thickness. I use a mandolin and slice them potato chip thickness. If you’re using a knife, be very careful and slice them as thing as you can.
  • Step 6 Place the sweet potato disks in an overlapping pattern on the bottom of the dish you’ll be using, covering the bottom as best as you can.
  • Step 7 Crumble up the sausage and spread it in a thin layer over the sweet potatoes.
  • Step 8 Spread the bell pepper & greens over the sausage in the dish.
  • Step 9 Press the rosemary into the sausage and vegetable mixture.
  • Step 10 In a medium bowl, whisk the eggs, alternative milk, salt and pepper very vigorously until finely mixed.
  • Step 11 Pour the egg mixture into the dish, gently pressing down any sausage or vegetable bits that float up to the top.
  • Step 12 Bake for 25-35 minutes, until the center of the eggs is set and the sweet potatoes are done. If you slice them 1/16 inch thick, they’ll be done around 25-30, but if they’re 1/8 inch thick, it may take longer. Enjoy!
