Cucumber Mint Margarita

Y’all. Last week I published a recipe for my Raspberry Rosé Mule and the people of the internet, specifically Pinterest, went absolutely bananas. I’ve been striving to work Pinterest effectively for a few months now and I got what I would call my first “viral pin” from it-HOORAY! So, after so many people loving on the Raspberry Rosé Mule, I thought why not create another craft cocktail? Because craft cocktails are single-handedly saving our lives right now, right? Also, I have amassed a small army of cucumbers due to this hot weather we’ve been enjoying. Alas, I bring you a clearly divine creation: the Cucumber Mint Margarita.

The Ingredients

  • Freshly-squeezed lime juice (Please do not use bottled. Just please!)
  • Mint leaves
  • Cucumber slices
  • Really good raw honey – Bee K’onscious Artisinal Honey is the BEST!
  • Silver Tequila
  • Cointreau
  • Club Soda OR sparkling water to top

Friends, I have cucumbers coming out of my ears over here. My garden is on fire this summer…and that’s probably due to the 15-year composted manure that we added before the planting season started.

An army of cucumbers that I’ve harvested from my garden this year. These will make perfect Cucumber Mint Margaritas.

If you know me or live within a 50-mile radius of me, you should be sure to lock your car doors because I may or may not throw some cucumbers in your back seat just to get rid of a few of these. 😉 Just a friendly PSA.

Since I absolutely loathe wasted food, I’m trying to use up these gorgeous cukes in just about everything. Who knows, I may even come up with a way to put cucumbers in cookies. Wouldn’t that be something – HA!

And since I love the refreshing flavor that cucumbers lend, I thought it would be phenomenal to try it out in a cocktail. Mixologists have been doing this for years, so I thought I’d give it a whirl.

These ingredients combine to make the perfect Cucumber Mint Margaritas.

Who knew cucumbers, mint, freshly-squeezed lime juice, high-quality tequila, really good honey, and Cointreau could be so magical together?

Well…it sure it. I just had to make sure all of the ingredients worked out in perfect proportions, first.

Creating The Cucumber Mint Margarita

Grab your cocktail shaker and muddler, because we’re at it again here, folks.

A classic cocktail shaker jar is a great tool to own for creating these Cucumber Mint Margaritas.

I like to start by muddling the cucumber slices and mint leaves with the freshly-squeezed lime juice.

Pro Tip: The mixture will look unappealing because we are basically turning these ingredients into a “mash.” But, please trust me when I say that we need all 3 ingredients to release their flavors and to integrate together.

Muddled cucumber slices, fresh mint leaves and lime juice sit in the cocktail shaker for just a few minutes so the flavors get completely integrated.

Let this mixture sit for just a bit – maybe 10 minutes – so that the flavors can combine and your mixture can release all of the liquid in each ingredient.

Next, add your choice of high-quality Silver Tequila, your favorite honey – my favorite honey is from Bee K’onscious Artisinal Honey because it’s single-origin, unfiltered, unpasteurized, non-blended AND absolutely delicious – and Cointreau to the cocktail shaker. Serve It Up!

Are you on team Salted-Rim OR Unsalted Rim when it comes to margaritas?

Salted rims are my personal favorite for these Cucumber Mint Margaritas.

I love salt & salting the rim of your low-ball glass ever so slightly adds a nice flavor contrast to the refreshing flavor notes of cucumber and mint.

In order to serve this beautiful Cucumber Mint Margarita, we’re going to strain that mixture over a low-ball glass to remove the “mash” inside the cocktail shaker. We ONLY want the liquid in our cocktail – no floaties allowed! Top off the cucumber-mint mixture with a little club soda or sparkling water, garnish with a few cucumber slices or ribbons and add a sprig or fresh mint.

Cucumber Mint Margarita

Refreshing and super delicious, this Cucumber Mint Margarita will have you sipping your new summer favorite in no time!

Ingredients
  • 4 oz. + 1 T. freshly squeezed lime juice
  • 8 fresh mint leaves
  • 8 cucumber slices
  • 1 T. honey (my new favorite is Bee K'onscious)
  • 1 1/2 oz. silver tequila
  • 1 oz. Cointreau
  • Club soda or sparkling water to top
Directions
  • Step 1 In a cocktail shaker or tall glass, muddle the 8 cucumber slices, 8 mint leaves and the lime juice together until the cucumbers are mushy and the mint becomes fragrant.
  • Step 2 Add the 1 T. honey, 1 1/2 oz. silver tequila and the 1 oz. Cointreau to the shaker jar.
  • Step 3 Shake the mixture until thoroughly combined.
  • Step 4 Using the strainer top on your cocktailer shaker or a small strainer set over a low-ball glass, strain the mixture into your glass filled with ice cubes.
  • Step 5 Top off the mixture with club soda or sparkling water if desired.
  • Step 6 Garnish with additional cucumber slices and mint leaves.
  • Step 7 Enjoy!
