Chicken Cobb Salad

Today’s recipe needs no real introduction as it’s a classic—Chicken Cobb Salad! We’re taking it up a notch with homemade herby ranch dressing so here’s the low-down of what’s to come for dinner tonight!

 

Remember when I promised you that we would be eating only real food throughout our Clean Eating series? Well, we have been & it’s been AH-MAZING! I did promise you no “bird food,” meaning that we would be using forks and knives, but I did need to throw in a hearty, delicious salad for good measure.

 

I love a GREAT chicken cobb salad…one that is so hearty that when you leave the table, you feel full. Really full. A salad where you hardly even notice that dinner was a salad. (gasp!) I do find that this is a salad my kids absolutely love because it’s loaded with all sorts of goodies they enjoy–diced chicken, tomatoes, hard boiled eggs, avocados, sunflower seeds, bacon, red onions–all drizzled with an amazing, whole 30 approved dressing.

 

Let’s talk dressing here for a moment. You can find delicious Whole 30 approved pre-made dressings in most large grocers or whole foods grocers pretty easily. If I’m going to buy one, I like the brand Primal Kitchen for my Whole 30 approved condiments. However, I do find that it’s pretty easy to whip one up on my own with a few pantry staples such as a real mayonnaise, coconut milk and some herbs and seasonings. Whatever is easiest and works for you, feel free to do here!

Chicken Cobb Salad

A classic Chicken Cobb Salad with the very best herby ranch dressing! We traded in the blue cheese for diced red onion and sunflower seeds and created a delicious ranch dressing to be drizzled on top~Enjoy!

Ingredients
  • 1 lb. Diced cooked chicken (you could use store-bought rotisserie or oven bake chicken breasts, let cool & diced up)
  • 2 cups spring mix salad greens
  • 2 cups bibb lettuce OR shredded romaine hearts
  • 1 cup chopped cherry tomatoes
  • 4-6 hard boiled eggs, chopped
  • 6-8 slices cooked bacon, chopped
  • 1-2 avocados, diced
  • 1/2 red onion, finely diced (optional)
  • 1/3 cup sunflower seeds
  • Whole 30 Ranch Dressing:
  • 1 cup Mayonnaise (buy REAL mayonnaise made with oil, eggs, vinegar)
  • Coconut milk to thin to desired consistency (I like a chunkier dressing, but if you want it to be a little thinner, then adjust and add more)
  • 1/4 cup chopped flat leaf parsley
  • 1 clove garlic, finely minced
  • 2 T. chopped fresh chives or green onions
  • 2 T. chopped fresh dill
  • 1/2 tsp. onion powder
Directions
  • Step 1 To blend dressing–In a blender or food processor, combine dressing ingredients and pulse a few times until well combined. Drizzle on salad immediately or store in an airtight container in the refrigerator for 5 days.
  • Step 2 I like to arrange my Cobb Salad just as pictured, with each ingredients in rows, if I’m going to be serving it to guests.
  • Step 3 When  serving them individually-plated at home, I arrange the lettuce in a shallow, wide bowl, then toss the remaining ingredients of chicken, tomatoes, eggs, bacon, avocados, sunflower seeds and onion on top.
  • Step 4 Drizzle with a Whole 30 approved dressing of your choice–Primal Kitchen is a great brand–OR make your own Whole-30 ranch dressing by using the recipe above.
