Bacon Encrusted Meatloaf + Sweet Potatoes

I don’t know about you, but there are just some nights where all I want are my slippers and some comfort food! You know, the type of food that warms your soul from the inside-out and fills you to the brim. One of my family’s favorite comfort foods is meatloaf…but not just any meatloaf. It must be my Bacon Encrusted Meatloaf + Sweet Potatoes.

I’m SO excited for today’s recipe, folks. You know why? It’s because today’s recipe does not feel like a super healthy recipe–at all! It even feels a little…naughty. I promise that when you serve this to your family, they’re not going to guess it’s one of your fancy clean-eating meals either. They’re just going to think it’s down-home good cookin’.



For this meatloaf recipe, I love using lean, grass fed beef from my “meat-man,” Chad. I combine that with the ground pork we buy from him as well. Buy the best you can find in your local grocer and that your budget allows. These two meats make an excellent, tender base for our meatloaf.

After that, the party really gets jumping when we add all of our herbs and seasonings! I like using coconut aminos combined with all the good stuff–onions, garlic, parsley, oregano, mustard, salt + pepper!

Of course, the entire mixture needs to come together…and stay together! This is where our almond flour comes into play. This is important because it acts as a binder for our mixture, alongside the water that we add at the end.

Then, there is bacon. Because…bacon makes everything SO much better, right? Not only does the bacon help keep the moisture inside the meatloaf while it cooks, it just looks good.

Serve this hearty meatloaf alongside some delicious oven-roasted sweet potatoes and you have yourselves a winner! Your family isn’t going to know what hit them!

Bacon Encrusted Meatloaf + Sweet Potatoes

A comforting classic meets Whole 30 requirements in this amazing, intensely flavored meatloaf encrusted with thick cut bacon on top! Pair it with a roasted sweet potato for the ultimate satisfying meal!

Ingredients
  • 1 lb. ground pork
  • 1 lb. ground beef
  • 1 medium yellow onion, finely chopped
  • 3-4 cloves garlic, finely minced
  • 1/4 cup chopped fresh parsley
  • 3 T. coconut aminos
  • 1 tsp. dried oregano
  • 1 T. yellow mustard
  • 1/4 cup almond flour
  • kosher or sea salt + freshly ground black pepper
  • 3 T. cold water
  • 5 slices thick cut bacon
  • 4 medium sweet potatoes, scrubbed and pierced with a knife
Directions
  • Step 1 Preheat the oven to 375 F.
  • Step 2 In a medium sized bowl, combine all of the ingredients for the meatloaf (everything except the water, bacon & sweet potatoes).
  • Step 3 Using a fork, gently combine the mixture until it’s barely combined, making sure you’re not overworking the mixture, or it will get tough. Once you see the mixture start to come together, add the cold water. Combine, but remain careful not to overwork. If the mixture is not sticking (as when you make meatballs, add 1 T. more at a time until it “sticks”).
  • Step 4 Once the mixture is combined, put it in a meatloaf pan and gently press the mixture down (or 9 x 5 loaf pan. Drape the bacon on top of the meatloaf to cover the top. Place it in the oven for 5-60 minutes until the juices run clear and the middle of the meatloaf is done.
  • Step 5 Meanwhile, scrub the sweet potatoes clean and pierce them with a sharp knife. Place them on a rimmed baking sheet and put them in the oven on a different rack in the oven for 45 minutes or so (the amount of time will depend slightly on the size of your sweet potatoes). The sweet potatoes are done when a knife inserted in them goes through very easily.
  • Step 6 When the meatloaf and potatoes are done, slice the meatloaf into 1 inch slices and serve alongside a sweet potato. Enjoy!
