We’re heading into the final leg of our clean eating series on the blog! How’s everyone feeling? I bet you all have the hang of this by now…but you’re still desiring more recipes for lunches and snacks? I know that I always have dinner covered, but I’m usually in need of ideas for those daytime meals. Today’s recipe comes from my desire to help you out during the work week…please meet Bacon Egg Salad!
This recipe is delectable. I mean…you are going to love it! We’ve all made egg salad before, but today’s recipe is made with clean ingredients and not served on bread…because we aren’t eating grains right now!
My Bacon Egg Salad is pretty simple and just as it sounds: hard-boiled eggs, clean mayonnaise, mustard, bacon, green onions, smokey paprika, a dash of cayenne and some salt and pepper. It’s a no-brainer here, folks!
Serve a generous helping of my Bacon Egg Salad on top of a bed of lettuce and you’ve got fuel for the rest of your day. This recipe is so good that you’ll be making it far after you’ve completed your month of clean eating!

Bacon Egg Salad
This amazing Whole 30 bacon egg salad will bring your weekday, packable lunches to life!
Ingredients
- 8 hard boiled eggs
- 1/2 cup mayonnaise
- 2 slices cooked bacon, chopped
- 1 T. chopped green onions
- 1 tsp. Dijon mustard or yellow mustard (your choice)
- 1/4 tsp. smoked paprika
- Dash of cayenne pepper (optional)
- kosher or sea salt + freshly ground black pepper
- 1 head lettuce, for serving
Directions
- Step 1 Peel the hard boiled eggs, chop them into small chunks.
- Step 2 Place the eggs in a medium sized bowl and add the mayonnaise, mustard, bacon, green onions, paprika and cayenne (if using). Season with salt and pepper to taste.
- Step 3 Place lettuce into a shallow dish and layer the egg salad on top of it.
- Step 4 Garnish with additional chopped green onions if desired!
Well, I want to tell you,,,,,,WOW, I have been making egg salad for over 50 years and this egg salad is NOT the kind our mother’s taught us to make! It is the best egg salad I have ever tasted! No kidding. When I first looked at the recipe I thought hhmmmm, bacon, paprika in egg salad? Well I tried it today for lunch and between my husband (the man who is afraid of trying anything that doesn’t involve lunch meat and some sort of potato) and myself we ate the whole bowl. I did make sandwiches and well need I say more. Try this recipe and you will never go back to the old fashioned way of making egg salad!
