Frozen Margarita Pie

There are few creations in this world as refreshing and delicious as margaritas and pie, but they are hardly one in the same. So on one sunny summer afternoon, I thought why not add them together and see what happens? Y’all – magic was made! It was probably one of the greatest inventions that ever happened, honestly. (HA!) You need to check out this Frozen Margarita Pie…your Cinco de Mayo or summer BBQ will be so happy you did!


The Crust

This recipe is so simple. Really! I promise you that!

I start by smashing up some graham cracker sheets and adding a little melted butter and a little granulated sugar. This is easy and forms the most delicious crust!

I like to do this in my food processor to make super light work out of it. If you don’t have a food processor, don’t forgo this recipe – that would be nonsense! Just put your graham crackers in a big plastic bag and crush them up with a rolling pin. Or, even better yet, let your kids crush them up while you move onto the next step!


Another option is to buy a pre-made graham cracker crust in the baking aisle of your grocery store. I’ve done this before in a pinch and it makes even lighter work out of creating this magical treat!

After you’ve combined these ingredients all together, the mixture should look and feel similar to wet sand. Take this mixture and press it evenly onto the bottom and up the sides of a shallow pie plate. Transfer the pie plate to the freezer while you create the filling.



The DELICIOUS Filling

To make this luscious filling that tastes like a spiked, frozen key lime pie, we first start by zesting and then juicing our room temperature limes. I mention the temperature of the limes should be at room temperature because that makes juicing them so much more efficient and effective! The citrus gives off so much more juice than cold limes do.

Pro Tip: If your limes are cold from the fridge, zap them in the microwave for 10-15 seconds to loosen up the juices and the membranes.

Next, using the whisk attachment of your stand mixer or a hand mixer, whisk the heavy cream until stiff peaks form.

Pro Tip: If you do not own these small appliances, you may also use a hand whisk. You will have to whisk for a long time (10-20 minutes) in order to incorporate enough air to reach stiff peak consistency.


After you have stiff peaks formed, set the bowl aside and prepare the other part of your filling. In a medium bowl, add the fresh lime juice, sweetened condensed milk, tequila and the remaining 1/4 tsp. kosher salt and whisk until the mixture is smooth and silky.

A Winning Combination

Now, you have two bowls that will be combined – very carefully – to create one delectable filling for this Frozen Margarita Pie! Take about half of the whipped cream mixture and gently fold it into the silky smooth lime juice and condensed milk mixture, taking great care not to deflate the air from your whipped cream. Once no streaks of whipped cream remain, fold the remaining whipped cream into the mixture using the same folding method.

Now it’s time to build our Frozen Margarita Pie! Remove the pie plate from the freezer and scrape the filling into the prepared crust. Use a spoon or an angled spatula to gently spread the filling evenly over the crust to the edges. Garnish your delicious pie with the lime zest and a sprinkle or two of flaky sea salt, if you desire.

Two of the greatest inventions - Margaritas + Pie - come together into one AMAZING dessert that your next gathering needs! Imagine a key lime pie colliding with an ice box cake and then they ordered a few margaritas - that's what this takes like!

Ingredients
  • Crust:
  • 6 T. butter
  • 10 graham cracker sheets
  • 3 T. granulated sugar
  • 1/2 tsp. kosher salt, divided
  • -OR-
  • Purchase 1 pre-made graham cracker crust
  • Pie Filling:
  • 4 limes, room temperature & halved
  • 3/4 cup chilled heavy cream
  • 1 14-ounce can sweetened condensed milk
  • 3-4 T. of your favorite tequila blanco
Directions
  • Step 1 To Make the Crust: Melt the butter in a small saucepan over low to medium heat and let it cool slighty.
  • Step 2 Crumble graham crackers in a food processor or high speed blender. Add the melted butter, sugar and 1/4 tsp. of the kosher salt and process until the mixture resembles wet sand.
  • Step 3 Transfer the mixture into a shallow 9 inch diameter pie dish. Using the bottom of a measuring cup or greased hands, press the graham cracker mixture firmly and evenly across the bottom of the pie plate and up the sides of the dish. Freeze for 20-30 minutes.
  • Step 4 Make the pie filling: Using the whisk attachment of a stand mixer OR a hand mixer, whisk the cream in a bowl until stiff peaks form, about 4-5 minutes.
  • Step 5 Finely grate the zest from 1 lime and set aside.
  • Step 6 Squeeze the juice from all of the limes until you have about 1/2 cup of juice.
  • Step 7 Pour the lime juice into a medium sized bowl and add the condensed milk, tequila, and remaining 1/4 tsp. sal and whisk until the mixture is smooth.
  • Step 8 Gently fold in half of the whipped cream just to combine, then add the remaining whipped cream and gently fold it in until no streaks remain. Be careful not to deflate the whipped cream during the folding as you want to keep as much air in the whipped cream as possible.
  • Step 9 Remove the pie dish from the freezer and scrape the filling into the crust. Using a spoon, gently spread the filling evenly all the way to the edges.
  • Step 10 Sprinkle the top with lime zest and a pinch of sea salt flakes, if desired.
  • Step 11 Freeze the pie until firm and filling is set, at least 8 hours.
  • Step 12 The pie can be made 3 days ahead of time. Let stand about 20 minutes before slicing. Enjoy!
